Blue Berry Protein Muffins:
If you look hard enough you will more than likely find healthy alternatives to the foods you crave most. These alternatives wont taste identical to the original but they can sometimes come close. I think that, that can be a great way to save yourself if you have a strong cravings regularly.
For this First Episode of Foodie Friday I decided to make Blue Berry Protein Muffins. The recipe is one suggested by the Quest Bar company. I love their treats. These muffins actually have bits of Quest bar in them so it gives it a nice chewy and even crunch taste.
So, If you want to purchase some quest bars I put a link to the best place on Amazon to buy them in bulk. I also placed a link to the protein Blue Bonnet. The rcipe asks you to use Quest Protein but I use Blue Bonnet because I prefer it. I also placed a link to the Quest Protein, just in case you want some as well.
If you decide to Substitute your protein the way I do, you need to make sure that the nutrition facts are similar. Some Proteins have a ton off added sugars or carbs and this will change the way that muffins bake so be careful what you use in place of the ones I recommend. Quest’s Blue Berry Almond Muffins
Nutrition Facts
1/10th of recipe (1 muffin): 100 calories, 5g total fat, 220mg sodium, 19g carbs, 5g fiber, 2g sugars, 8g protein

Ingredients:
2 egg whites
1/2 cup unsweetened almond milk
1/4 cup no-sugar-added applesauce
1 tbsp. coconut oil
1 tsp. vanilla extract
1/2 cup granulated zero-calorie sweetener
1/4 cup coconut flour
1/4 cup almond flour 2 scoops Quest® Vanilla Milkshake Protein Powder
1 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt 2 Vanilla Almond Crunch Quest Bars®, broken into small pieces
3/4 cup fresh blueberries
Directions:
Preheat oven to 350 degrees.
Line 10 cups of a 12-cup muffin pan with foil baking cups, and spray with nonstick spray.
In a medium mixing bowl, combine egg whites, almond milk, applesauce, coconut oil, and vanilla extract. Using a handheld electric mixer set to low, mix until uniform.
In a large mixing bowl, mix zero-calorie sweetener, coconut flour, almond flour, Quest® Vanilla Milkshake Protein Powder, baking powder, baking soda, and salt.
Add contents of the medium bowl to the large bowl. With the electric mixer set to medium low, mix until well combined.
Fold in the pieces of Vanilla Almond Crunch Quest Bars® and 1/2 cup blueberries. Evenly distribute mixture among the 10 lined/sprayed cups of the muffin pan.
Top with remaining 1/4 cup blueberries. Bake until a toothpick inserted into the center of a muffin comes out clean, 22 – 23 minutes. Let cool for 10 – 15 minutes, and serve.
